Switzerland is renowned for being a country where time is a strong national symbol. The philosophy of Terres de Lavaux highlights the importance of time in the wine-making process in a century where everything is ephemeral and rushed.

Terres de Lavaux is located in the canton of Vaud. The vineyards are laid out in terraces overlooking Lake Geneva. Among the very diverse grape varieties of the region, we find, among others, Gamay, Garanoir, and in white, the emblematic Chasselas.

The Adaptive organic viticulture

Adaptive organic viticulture is an environmentally friendly, “non-dogmatic” approach that leaves a lot of room for manoeuvre for the winemakers. This allows them to adapt more easily to unusual and difficult contexts while practising sustainable viticulture.

It follows a logic of restriction of synthetic chemistry, copper and sulphur, substituted by substances of plant origin. It uses weed control without herbicides.

Terres de Lavaux follows a responsible winegrowing process: they use more disease-resistant grape varieties, reduct the use of herbicide and treatments.

Jean-Charles Estoppey

 

Mr. Estoppey takes a stand against the initiative “For a Switzerland free of synthetic pesticides”. According to him, the latter would impose many constraints on winegrowers, while they are already redoubling their efforts to protect the environment.

Colour intense ruby.

Nose of red fruits with a lot of freshness, which is found in the mouth with a marked aromatic intensity reminiscent of cherry, in a young wine.

Beautiful, tender and harmonious structure.

Enjoy it with lentil stew with aubergine and pomegranate.!

Gamaret-Garanoir “Orpheus” 2017

50% Gamaret 50% Garanoir

Colour deep garnet-red, purplish.

On the nose, notes of vanilla, black cherries, liquorice and pepper.

On the palate it develops all its richness, structure and complexity. The tannins are present but silky. The finish is well supported by a good length.

Enjoy it with beetroot tartare with onions and vanilla sauce !
